Simple Salt & Pepper Pork with Rice and Peas
Ingredients
For the Pork:
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons olive oil
For the Rice and Peas:
1 cup long-grain rice
2 cups water or chicken broth
1 cup frozen peas
1 tablespoon butter
Salt and pepper to taste
Directions
Prepare the Pork:
Season the pork chops generously with salt and pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the pork chops to the skillet.
Cook the pork chops for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C) and have a nice golden-brown crust.
Remove the pork from the skillet and let it rest for a few minutes before serving.
Cook the Rice:
In a medium saucepan, bring the water or chicken broth to a boil.
Add the rice to the boiling liquid, reduce the heat to low, cover, and simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed.
Fluff the rice with a fork and stir in the butter.
Prepare the Peas:
In a small pot, bring a cup of water to a boil.
Add the frozen peas and cook for about 2-3 minutes, or until the peas are tender and bright green.
Drain the peas and season with salt and pepper to taste.
Combine and Serve:
Add the cooked peas to the fluffed rice and mix well.
Serve the seasoned pork chops alongside the rice and peas.
